How do I get a matte black finish?

Matte comes from the top coat, not the color. Apply and cure your black as normal, then finish with a matte top coat instead of a gloss. Cre8tion Super Matte Top Coat No Wipe leaves nothing to wipe back, and there is a matte top for air dry lacquer too. Keep that last coat even, since matte shows every thin patch.

Why does black gel look patchy or grey at the free edge?

Black hides nothing. Two thin coats beat one thick one, and you have to cap the free edge on every coat or the color wears back and reads grey. Keep it off the cuticle wall, where shrinkage shows. If a shade still looks sheer, it is a jelly or a flake gel and wants a solid black under it.
